Cheesy Jack o Lantern Quesadillas are a spooky, fun twist on a cheesy classic—crispy, melty, and perfect for Halloween parties, festive dinners, or kid-friendly lunches.

- 4 large flour tortillas
- 1½ cups shredded cheddar cheese (or a mix of cheddar and mozzarella)
- ½ cup cooked and shredded halal chicken (optional)
- 1 small bell pepper, finely diced
- 1 small red onion, finely diced
- 2 tbsp olive oil or butter for brushing
- Sour cream, guacamole, or salsa for dipping
Instructions
- Use a small paring knife to cut a Jack o Lantern face into two of the tortillas. Get creative with eyes, nose, and a jagged mouth!
- On the whole (uncut) tortillas, sprinkle cheese evenly over each, then layer with chicken, bell pepper, and red onion if using.
- Top each with a Jack o Lantern tortilla face.
- Heat a skillet over medium heat and lightly brush with olive oil or butter.
- Cook the quesadillas one at a time, face-side down first, for about 2–3 minutes until golden and crisp. Flip carefully and cook the other side for another 2–3 minutes.
- Slice into wedges and serve with your favorite dips.
