Ingredients
1 ½ lbs boneless, skinless chicken breasts, diced
1 tbsp olive oil
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
Salt & pepper, to taste
1/3 cup honey
2–3 tbsp hot sauce
1 cup sour cream
1–2 jalapeños, deseeded & chopped
1 tsp lime juice
1 tsp garlic powder
8 large flour tortillas
2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
2 tbsp butter
Fresh cilantro (optional)
Instructions
Season and cook chicken until golden. Mix honey and hot sauce; coat chicken. Prepare jalapeño cream sauce by mixing sour cream, jalapeños, lime juice, and seasoning. Assemble quesadillas with cheese, chicken, and more cheese. Cook in buttered skillet until golden and melted. Serve with sauce and garnish.
Notes
Adjust spice by varying hot sauce and jalapeño amount. Use Greek yogurt instead of sour cream for a lighter sauce. Pair with guacamole, pico de gallo, or Mexican rice for a complete meal.
