- 4 boneless, skinless chicken breasts (pounded thin)
- 1½ tsp Cajun seasoning (plus more to taste)
- 1 tsp garlic powder
- Salt and pepper, to taste
- 1 cup shredded mozzarella cheese
- ½ cup shredded pepper jack cheese
- 2 tbsp olive oil
- 1 tbsp butter
- 2 cloves garlic, minced
- ½ cup jarred roasted red peppers, finely chopped
- 1 cup heavy cream
- ½ tsp Cajun seasoning
- ¼ cup grated Parmesan cheese
- Fresh chopped parsley (optional)
- Extra Parmesan (optional)
Instructions
- Preheat oven and season pounded chicken breasts.
- Stuff each with mozzarella and pepper jack, then roll and secure.
- Sear rollups in olive oil until golden.
- Transfer to oven and bake until cooked through.
- In a saucepan, melt butter, sauté garlic, add roasted red peppers.
- Stir in cream, Cajun seasoning, and Parmesan to create sauce.
- Simmer until thickened, season to taste.
- Spoon sauce over chicken rollups, garnish, and serve.
Notes
Use toothpicks to secure rollups while baking. Sauce can be doubled for pasta. Adjust Cajun seasoning for desired spice level.
