- 2 tbsp butter
- 1 small onion, diced
- 3 garlic cloves, minced
- 4 cups diced potatoes
- 3 cups vegetable broth
- 1 cup milk or cream
- 1 ½ cups shredded sharp cheddar cheese
- ½ tsp dried thyme
- ½ tsp dried parsley
- ½ tsp salt, or to taste
- ¼ tsp black pepper
- Optional toppings: halal turkey bacon (cooked and crumbled), green onions, extra cheddar
Instructions
- Melt the butter in a pot over medium heat. Add the onion and sauté until softened.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add the diced potatoes and vegetable broth. Bring to a simmer.
- Cook for 12–15 minutes, or until potatoes are tender.
- Lightly mash some of the potatoes for extra creaminess.
- Add milk or cream, thyme, parsley, salt, and pepper. Simmer for 3–4 minutes.
- Stir in the cheddar until melted and smooth.
- Serve warm with optional halal turkey bacon, green onions, or extra cheese.
Notes
- Vegetarian-friendly and easily adaptable with optional halal toppings.
- For a dairy-free version, substitute with plant-based milk and dairy-free cheese.
- To intensify flavor, simmer a few minutes longer or add a pinch of paprika.
