Cauliflower Red Lentil Soup: a smooth, creamy, plant-powered bowl that’s nourishing, vegan, and gluten-free.

- 2 tbsp olive oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- ½ tsp turmeric
- ½ tsp paprika
- ½ tsp black pepper
- ½ tsp salt (adjust to taste)
- 1 medium head cauliflower, chopped
- 1½ cups red lentils, rinsed
- 7 cups vegetable broth
- 1 cup canned coconut milk
- 1 tbsp lemon juice
- Optional garnish: fresh parsley or cilantro
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and cook until soft, about 5 minutes.
- Stir in garlic, cumin, coriander, turmeric, paprika, salt, and black pepper; cook 30 seconds until fragrant.
- Add cauliflower, red lentils, and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 30–35 minutes until everything is tender.
- Blend until smooth using an immersion blender or in batches.
- Stir in coconut milk and lemon juice, then simmer 5 more minutes.
- Adjust seasoning and serve warm.
