Description

Cauliflower Red Lentil Soup: a smooth, creamy, plant-powered bowl that’s nourishing, vegan, and gluten-free.


Ingredients

  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp turmeric
  • ½ tsp paprika
  • ½ tsp black pepper
  • ½ tsp salt (adjust to taste)
  • 1 medium head cauliflower, chopped
  • 1½ cups red lentils, rinsed
  • 7 cups vegetable broth
  • 1 cup canned coconut milk
  • 1 tbsp lemon juice
  • Optional garnish: fresh parsley or cilantro

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until soft, about 5 minutes.
  3. Stir in garlic, cumin, coriander, turmeric, paprika, salt, and black pepper; cook 30 seconds until fragrant.
  4. Add cauliflower, red lentils, and vegetable broth.
  5. Bring to a boil, then reduce heat and simmer for 30–35 minutes until everything is tender.
  6. Blend until smooth using an immersion blender or in batches.
  7. Stir in coconut milk and lemon juice, then simmer 5 more minutes.
  8. Adjust seasoning and serve warm.
