- 4 large carrots, peeled and sliced
- 1 cup red lentils, rinsed
- 5 cups vegetable broth
- 1 tbsp lemon juice

Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and cook until soft and translucent, about 4–5 minutes.
- Stir in garlic, cumin, coriander, paprika, salt, and black pepper; cook for 30 seconds until fragrant.
- Add carrots, lentils, and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 20–25 minutes until carrots and lentils are tender.
- Blend partially or fully for desired consistency.
- Stir in lemon juice and adjust seasoning before serving.

- The soup is naturally gluten-free when using gluten-free broth.
- Can be blended partially for a chunky texture or fully for a smooth puree.
