1 lb large shrimp, peeled & deveined
2 tbsp Cajun seasoning
1 tsp smoked paprika
1 tsp garlic powder
2 tbsp olive oil
1 tbsp butter
1/2 cup Parmesan cheese, grated
1 cup crushed tortilla chips or panko breadcrumbs
3 tbsp butter, melted
1 tsp garlic powder
1 tsp ranch seasoning
4 large flour tortillas
1 cup lettuce, shredded
1/2 cup tomatoes, diced
1/2 cup cheddar cheese, shredded
1/4 cup ranch dressing
Fresh parsley (optional)
Instructions

Mix crushed chips/panko with butter, garlic powder, and ranch seasoning; bake until crisp.

Toss shrimp with Cajun seasoning, paprika, and garlic powder; cook in butter and oil, then coat with Parmesan.
