A spicy one-pot Cajun Cabbage Jambalaya loaded with sausage, rice, and vegetables—perfect for a bold and hearty Southern dinner.
Ingredients
1 lb ground beef or pork sausage
1 medium onion, diced
1 green bell pepper, diced
2 cloves garlic, minced
1 small head green cabbage, chopped
1 (14.5 oz) can diced tomatoes, undrained
1 cup uncooked long-grain white rice
2 cups beef broth
1 tbsp Cajun seasoning
½ tsp smoked paprika
¼ tsp cayenne pepper (optional)
Salt and black pepper, to taste
2 tbsp olive oil
Fresh parsley, chopped (for garnish)
Instructions

Heat olive oil; brown sausage or beef.

Add onion, bell pepper, garlic—sauté until soft.

Stir in cabbage and cook until wilted.

Mix in tomatoes, rice, broth, and seasonings.

Simmer covered for 20–25 mins until rice is tender.

Notes
Adjust spice level to your preference. Use turkey sausage for a lighter version. Leftovers reheat well for up to 3 days.
