A spicy one-pot Cajun Cabbage Jambalaya loaded with sausage, rice, and vegetables—perfect for a bold and hearty Southern dinner.


Ingredients

1 lb ground beef or pork sausage

1 medium onion, diced

1 green bell pepper, diced

2 cloves garlic, minced

1 small head green cabbage, chopped

1 (14.5 oz) can diced tomatoes, undrained

1 cup uncooked long-grain white rice

2 cups beef broth

1 tbsp Cajun seasoning

½ tsp smoked paprika

¼ tsp cayenne pepper (optional)

Salt and black pepper, to taste

2 tbsp olive oil

Fresh parsley, chopped (for garnish)


Instructions

  • Heat olive oil; brown sausage or beef.

  • Add onion, bell pepper, garlic—sauté until soft.

  • Stir in cabbage and cook until wilted.

  • Mix in tomatoes, rice, broth, and seasonings.

  • Simmer covered for 20–25 mins until rice is tender.

  • Let rest 5 mins; garnish and serve hot.

Notes

Adjust spice level to your preference. Use turkey sausage for a lighter version. Leftovers reheat well for up to 3 days.
