Description

Breakfast Pancake Poppers are fluffy, golden, bite-sized pancakes baked in a mini muffin tin for easy, kid-friendly mornings.


Ingredients

  • 1 tbsp sugar
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 large egg
  • ¾ cup milk
  • 1 tbsp melted butter or oil
  • ½ tsp vanilla extract
  • Optional mix-ins: mini chocolate chips, blueberries, or diced strawberries

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a mini muffin tin.
  2. In a bowl, whisk flour, sugar, baking powder, and salt.
  3. In another bowl, whisk egg, milk, melted butter, and vanilla.
  4. Stir wet ingredients into dry ingredients until just combined.
  5. Fold in optional mix-ins if using.
  6. Fill each muffin cup about ¾ full.
  7. Bake for 10–12 minutes, until puffed and lightly golden.
  8. Let cool slightly before removing. Serve warm with syrup or fruit.
