Blueberry Lemon French Toast Casserole is a bright, cozy brunch favorite that blends juicy blueberries with fresh lemon flavor in a soft, custardy baked French toast.

Ingredients

Scale
  • 1 loaf day-old brioche or challah bread, cubed
  • 2 cups fresh or frozen blueberries
  • Zest of 1 large lemon
  • ½ cup fresh lemon juice
  • 6 large eggs
  • 2 cups milk
  • ½ cup heavy cream
  • ¾ cup granulated sugar
  • 2 tbsp brown sugar
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ¼ tsp salt
  • 2 tbsp butter, melted
  • Optional topping: Powdered sugar or maple syrup for serving

Instructions

  1. Grease a 9×13-inch baking dish and spread half of the bread cubes evenly inside.
  2. Sprinkle blueberries and lemon zest over the bread, then top with remaining bread cubes.
  3. In a bowl, whisk eggs, milk, cream, granulated sugar, brown sugar, lemon juice, vanilla, cinnamon, and salt until smooth.
  4. Pour the mixture evenly over the bread, pressing gently so everything is soaked.
  5. Cover and refrigerate for at least 1 hour or overnight.
  6. Preheat oven to 350°F (175°C). Drizzle melted butter over the casserole.
  7. Bake uncovered for 45–50 minutes until golden and set in the center.
  8. Let rest 10 minutes before serving. Dust with powdered sugar or drizzle with maple syrup if desired.
