- 1 ½ cups rolled oats
- 1 cup all-purpose flour
- ¾ cup brown sugar
- ½ tsp baking powder
- ¼ tsp salt
- ¾ cup melted butter
- 8 oz cream cheese, softened
- ⅓ cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 ½ cups fresh or frozen blueberries
- 1 tbsp sugar
- 1 tsp cornstarch
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a bowl, mix oats, flour, brown sugar, baking powder, and salt. Stir in melted butter until crumbly.
- Press about two-thirds of the mixture firmly into the bottom of the pan.
- In another bowl, beat cream cheese, sugar, egg, and vanilla until smooth. Spread evenly over the crust.
- Toss blueberries with sugar and cornstarch, then sprinkle evenly over the cream cheese layer.
- Top with remaining oat crumble.
- Bake for 35–40 minutes until lightly golden and set. Cool completely before slicing.
