Blueberry Butter Swim Biscuits: Dreamy, rich, buttery biscuits bursting with blueberries, baked in melted butter to create crisp edges and a soft, fluffy center.

- 2½ cups all-purpose flour
- 1 tbsp baking powder
- ½ cup sugar
- ½ tsp salt
- 1¾ cups buttermilk
- 1 tsp vanilla extract
- 1½ cups fresh or frozen blueberries
- ½ cup unsalted butter, melted
Instructions
- Preheat oven to 450°F (230°C). Pour melted butter into an 8×8-inch baking dish, coating the bottom evenly.
- In a large bowl, whisk flour, baking powder, sugar, and salt.
- Stir in buttermilk and vanilla until just combined.
- Gently fold in blueberries.
- Spoon batter evenly over melted butter in the baking dish and spread lightly. Do not mix the butter into the batter.
- Score the dough into 9 squares before baking.
- Bake for 25–30 minutes, until golden brown on top.
- Cool slightly before serving.
Notes
- If using frozen blueberries, do not thaw before folding into the batter.
- Do not mix the melted butter into the batter; the butter should bake underneath to create crisp edges.
- Best served warm, straight from the oven.
- Leftovers can be stored in an airtight container for up to 2 days; reheat gently before serving.
