- 16 large white mushrooms, stems removed and finely chopped
- 2 tbsp olive oil
- 1 tbsp butter
- 3 cloves garlic, minced
- ¼ cup finely diced onion
- ¼ cup cream cheese, softened
- ½ cup shredded mozzarella
- ¼ cup grated Parmesan
- 2 tbsp fresh parsley, chopped
- ½ tsp dried thyme
- ½ tsp black pepper
- ¼ tsp salt
- Red pepper flakes (optional)
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Clean the mushrooms and remove the stems, finely chopping the stems for the filling.
- Heat olive oil and butter in a skillet over medium heat. Add chopped stems and onion; cook 3–4 minutes until softened.
- Stir in garlic and cook for 30 seconds.
- Remove from heat and mix in cream cheese, mozzarella, Parmesan, parsley, thyme, salt, and pepper.
- Spoon the filling into the mushroom caps, packing them generously.
- Arrange on the baking sheet and bake for 18–20 minutes until golden and bubbly.
- Garnish with extra parsley or a pinch of red pepper flakes.

- Tip: Use a spoon to fill the mushroom caps for neat portions.
- Best served warm, but can be stored in the fridge for up to 1 day before baking.
