- 2 cups cooked chicken breast, shredded or cubed
- 1 tbsp olive oil
- 1 tsp garlic powder

- ½ tsp salt
- ½ tsp black pepper
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- For the sauce:
- 1 cup heavy cream
- 4 oz cream cheese, softened
- ½ cup grated Parmesan cheese
- 1 tsp dried Italian seasoning
- ½ tsp onion powder
- Pinch of salt and black pepper
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a 9×13 inch baking dish.
- Toss cauliflower florets with olive oil, garlic powder, paprika, salt, and black pepper. Spread on a baking sheet and roast for 15 minutes until slightly tender.
- In a saucepan over medium heat, combine heavy cream and cream cheese. Stir until smooth and creamy.
- Add Parmesan cheese, Italian seasoning, onion powder, salt, and pepper. Simmer for 2 to 3 minutes until slightly thickened.
- In the prepared baking dish, combine roasted cauliflower and cooked chicken. Pour the cream sauce over and gently mix.
- Sprinkle cheddar and mozzarella evenly on top.
- Bake for 20 to 25 minutes until bubbly and golden on top.
