Ingredients

  • 1 lb beef stew meat, cut into small chunks
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 6 cups beef broth
  • 1 cup pearl barley
  • 1 cup diced potatoes (optional but delicious)
  • 1 tsp dried thyme
  • ½ tsp paprika
  • ½ tsp salt, or to taste
  • ¼ tsp black pepper
  • 1 bay leaf
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add the beef and brown on all sides.
  2. Add onion, carrots, and celery. Cook until softened.
  3. Stir in garlic and cook for 30 seconds until fragrant.
  4. Add beef broth, barley, potatoes (if using), thyme, paprika, salt, pepper, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for 45–55 minutes, or until the beef is tender and the barley is cooked.
  6. Remove bay leaf and adjust seasoning as needed.
  7. Serve warm and garnish with fresh parsley.
