Description

Apple Pie Oatmeal Cookies are easy, cozy and healthy cookies that taste like a slice of apple pie.


Ingredients

  • 1 cup rolled oats
  • ¾ cup whole wheat flour or gluten free flour blend
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 large egg
  • ¼ cup honey or maple syrup
  • 2 tbsp melted coconut oil or butter
  • ½ cup unsweetened applesauce
  • 1 tsp vanilla extract
  • ¾ cup finely diced apples

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix oats, flour, cinnamon, nutmeg, baking powder, and salt.
  3. In another bowl, whisk egg, honey, melted oil, applesauce, and vanilla.
  4. Stir wet ingredients into dry ingredients until combined.
  5. Fold in diced apples.
  6. Scoop dough onto baking sheet and gently flatten slightly.
  7. Bake for 10-12 minutes, until set and lightly golden.
  8. Cool on the pan before serving.

Notes

  • Yields 14-16 cookies.
