Apple Pie Oatmeal Cookies are easy, cozy and healthy cookies that taste like a slice of apple pie.
Ingredients

- 1 cup rolled oats
- ¾ cup whole wheat flour or gluten free flour blend
- 1 tsp cinnamon
- ¼ tsp nutmeg
- ½ tsp baking powder
- ¼ tsp salt
- 1 large egg
- ¼ cup honey or maple syrup
- 2 tbsp melted coconut oil or butter
- ½ cup unsweetened applesauce
- 1 tsp vanilla extract
- ¾ cup finely diced apples
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix oats, flour, cinnamon, nutmeg, baking powder, and salt.
- In another bowl, whisk egg, honey, melted oil, applesauce, and vanilla.
- Stir wet ingredients into dry ingredients until combined.
- Fold in diced apples.
- Scoop dough onto baking sheet and gently flatten slightly.
- Bake for 10-12 minutes, until set and lightly golden.
- Cool on the pan before serving.
Notes
- Yields 14-16 cookies.
- Best enjoyed fresh; store in an airtight container for up to a few days.
- To make gluten-free, use a gluten-free flour blend.
