Ingredients

  • 1 cup finely diced apple
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/4 cup maple syrup or honey
  • 1/4 cup vegetable oil
  • 1/2 cup milk
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 375°F (190°C) and line a muffin tin with liners.
  2. In a bowl, whisk flour, baking powder, cinnamon, and salt.
  3. In another bowl, mix mashed lentils, apple, maple syrup, oil, milk, egg, and vanilla.
  4. Add dry ingredients to wet ingredients and stir just until combined.
  5. Divide batter evenly among muffin cups.
  6. Bake for 18–20 minutes, until a toothpick inserted comes out clean.
  7. Let cool slightly before serving.
