Ingredients

  • ¼ cup coconut oil or olive oil
  • ¼ cup honey or maple syrup
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup finely chopped apples (peeled if desired)
  • Optional: 2 tbsp brown sugar or coconut sugar for sprinkling on top

Instructions

  1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a large bowl, mix Greek yogurt, oil, honey, eggs, and vanilla until smooth.
  4. Gradually add the dry ingredients into the wet mixture, stirring gently until just combined.
  5. Fold in chopped apples and divide the batter evenly among muffin cups.
  6. Sprinkle tops with a little brown or coconut sugar for a sweet crust (optional).
  7. Bake for 18–20 minutes or until a toothpick inserted in the center comes out clean. Cool slightly before serving warm.
