Instructions
- Preheat oven to 350°F (175°C). Grease an 8×8 baking dish.
- In a bowl, whisk cottage cheese, eggs, maple syrup, vanilla, cinnamon, nutmeg, and salt until well combined.
- Fold in diced apples, and add oats or raisins if using.
- Pour mixture into the prepared dish and spread evenly.
- Bake 35–40 minutes, or until set in the center and lightly golden.
- Cool slightly before serving. Enjoy warm, with an extra drizzle of maple syrup if desired.
