- 6 rice paper wrappers
- 1 medium zucchini, julienned
- ½ cup cottage cheese
- 1 carrot, julienned
- 2 tablespoons chopped cilantro
- Spray oil (olive or avocado recommended)
- Soy sauce or sweet chili sauce for dipping
Instructions
- Fill a shallow plate with warm water. Soak one rice paper wrapper until pliable, about 15–20 seconds.
- Place the wrapper flat on a plate or board.
- Add a small portion of zucchini and carrot to the center.
- Spoon about 1½ tablespoons cottage cheese over the vegetables.
- Sprinkle with chopped cilantro.
- Fold in the sides and roll tightly from the bottom to form a sealed roll. Repeat with remaining wrappers.
- Preheat air fryer to 375°F.
- Spray each roll lightly with oil and place seam-side down in air fryer basket.
- Air fry for 8–10 minutes, flipping halfway, until golden and crisp.
- Serve hot with dipping sauce of choice.
Notes
- Do not oversoak rice wrappers — just soften enough to roll.
- Keep assembled rolls covered with a damp towel while prepping the rest.
- Add cooked chicken or tofu for more protein.
- Store leftovers in the fridge for up to 2 days.
- Reheat in air fryer at 350°F for 3–5 minutes.
