Description

High-protein air-fried chocolate muffins made with cottage cheese, oat flour, and cocoa. A quick, healthy breakfast or snack option, ready in under 15 minutes.


Ingredients

  • 1 cup cottage cheese
  • 2 eggs
  • ½ cup oat flour
  • 2 tbsp cocoa powder
  • ¼ cup chocolate chips
  • 1 tsp baking powder
  • 2 tbsp maple syrup
  • Pinch of salt

Instructions

  • 1. Preheat air fryer to 320°F (160°C).
  • 2. Add cottage cheese, eggs, oat flour, cocoa powder, baking powder, maple syrup, and salt to a blender. Blend until smooth.
  • 3. Transfer to a bowl and fold in chocolate chips.
  • 4. Spoon batter evenly into six silicone muffin cups.
  • 5. Air-fry for 12–15 minutes, or until a toothpick inserted in the center comes out clean.
  • 6. Cool muffins for 5 minutes in the air fryer before removing and serving.

Notes

  • Top each muffin with extra chocolate chips before baking for added texture.
  • Use silicone muffin cups to avoid sticking and ensure even cooking.
  • Store leftovers in the fridge for up to 5 days or freeze for 2 months.
  • Reheat in air fryer for 2–3 minutes at 300°F or microwave for 30 seconds.
