Description
High-protein air-fried chocolate muffins made with cottage cheese, oat flour, and cocoa. A quick, healthy breakfast or snack option, ready in under 15 minutes.

- 1 cup cottage cheese
- 2 eggs
- ½ cup oat flour
- 2 tbsp cocoa powder
- ¼ cup chocolate chips
- 1 tsp baking powder
- 2 tbsp maple syrup
- Pinch of salt
Instructions
- 1. Preheat air fryer to 320°F (160°C).
- 2. Add cottage cheese, eggs, oat flour, cocoa powder, baking powder, maple syrup, and salt to a blender. Blend until smooth.
- 3. Transfer to a bowl and fold in chocolate chips.
- 4. Spoon batter evenly into six silicone muffin cups.
- 5. Air-fry for 12–15 minutes, or until a toothpick inserted in the center comes out clean.
- 6. Cool muffins for 5 minutes in the air fryer before removing and serving.
Notes
- Top each muffin with extra chocolate chips before baking for added texture.
- Use silicone muffin cups to avoid sticking and ensure even cooking.
- Store leftovers in the fridge for up to 5 days or freeze for 2 months.
- Reheat in air fryer for 2–3 minutes at 300°F or microwave for 30 seconds.
