Instructions
- Preheat oven to 350°F (175°C). Grease or line a standard loaf pan with parchment paper.
- In a large bowl, mash bananas until mostly smooth.
- Stir in the maple syrup until well combined.
- Add oat flour and baking soda; stir until just combined. Avoid overmixing.
- Transfer batter to prepared loaf pan and smooth the top.
- Bake for 35–40 minutes, until golden brown and a toothpick inserted comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
